Basic French Onion Soup
Ingredients
- 4 TBSP Olive Oil
- 2 TBSP Butter
- 2 or 3 Cloves of Minced Garlic
- 5 or 6 Onions, peeled and sliced thin
- 1/2 tsp Salt
- 2 tsp Pepper
- 1 tsp sugar
- 2 TBSP Worcestershire Sauce
- 2 32oz Beef Stock
- 1 Loaf of French Bread Sliced and Buttered
- 8 oz Sliced Provolone or Swiss Cheese
In a large stock pot, place first six ingredients on medium heat and toss the onions and minced garlic until they are well coated. Cook the onions for 15-20 minutes. Increase the heat and cook another 10 or so minutes to caramelize the onions. Sprinkle the 1/2 tsp of sugar to aid the caramelizing process. Stir frequently to avoid burning the onion slices. Once the onions have caramelized and are brown then add in the Worcestershire Sauce and Beef Stock. Add salt and pepper to taste and simmer for another 20-25 minutes on low heat.
Place the buttered French bread slices on a sheet pan. You may also use olive oil seasoned as you prefer instead of butter. Put pan on the top rack on broil. Leave oven door slightly open to observe them as they brown so they do not burn. Pull out just before they are toasted to the desired degree and place slices of Provolone or Swiss Cheese on the bread. Return it back under the broiler until the cheese has melted and browned slightly. Serve with a piping hot bowl of French Onion Soup. Enjoy!
Chicken Ramen with Spinach Soup
Ingredients
- 4 TBSP Olive Oil
- 1 Onion, sliced
- 3 Cloves of Garlic, minced
- 3 Medium Carrots, peeled and sliced
- 1/4 C Lemon Juice, fresh squeezed
- 12 ozs Spinach leaves, fresh
- 2 C Cooked Chicken, cubed
- 2 32oz Carton of Chicken Stock
- 2-4 pkgs Ramen Noodles, WITHOUT season packets
- Keeblers Club Crackers
- Grated Parmesan Cheese
In a large stock pot, place the first 4 ingredients on medium heat and toss the items until the onions and carrots are well coated. Cook the ingredients 15-20 minutes until the onions are translucent. Add both cartons of chicken stock and cooked, cubed chicken. Cover and continue to cook until the carrots are tender. You can expedite this by using canned carrots if you’d like. Once the carrots are tender then add the lemon juice, spinach, and the desired amount of ramen noodles. Discard the season packets. Continue simmering until the ramen noodles are cooked. Serve up a bowl or mug of soup garnished with grated Parmesan cheese accompanied by crackers. Enjoy!
Tasty Taco Soup
Ingredients
- 1 lb. of browned lean hamburger meat
- 1 15 oz. can kernel corn, drained
- 2 cans of chili beans, undrained, hot or mild, your preference
- 1 can of black beans, drained
- 2 cans of diced tomatoes, with or without green chiles, your preference
- 1 pkg. taco seasoning, mild or spicy, your preference
- 2 to 3 C of water
- Shredded Cheddar cheese
- Sour Cream
- Corn Chips
In a large stock pot place the browned hamburger meat and taco seasoning. Mix well. Add in the drained corn, beans, tomatoes, and water. Turn on medium to high heat and stir well. Bring to a boil then reduce heat and simmer for another 15-20 minutes. Serve soup topped with shredded cheese, sour cream, and crumbled corn chips. Enjoy!
